Simple recipes for Toddlers
Toddlers are not very easy people to cook for. They are just beginning to learn about different tastes and they are also starting to assert themselves. So mealtimes turn into minor warzones with harassed mothers and recalcitrant toddlers.
You can change this scenario by cooking simple foods which entice them into eating.
Here are three of those simple recipes:
Rice Pudding with Apples:
2 cups water
½ cup rice
¼ cup diced apples
½ tsp. Ginger
Sugar as required
1/8 cup milk
2 tsp cinnamon
Grind the rice fairly coarsely. Cook rice with water, apples, ginger and sugar until it becomes soft and mushy. Add milk and cinnamon and let it cook for a minute or so more. Add more milk or water if the mixture becomes too thick.
{This recipe can be varied with different fruits such as stewed pears or mashed bananas – which should be added only in the end}
Macaroni and Cheese:
This is an eternal favourite with children. Simple to make and fairly wholesome, it can be varied with the addition of boiled vegetables to make it look and taste better.
Make a simple white sauce with milk and ample quantities of Amul or any other grated cheese. Cook elbow macaroni according the manufacturer’s instructions. Mix the two together and serve it immediately.
You can also bake this with a topping of breadcrumbs or even crushed crackers mixed with salt and pepper.
Spinach and Rice:
Pressure cook spinach ,rice, salt and cumin seeds. The proportions are dependent on how much your toddler enjoys spinach! Blend the mixture coarsely and serve it to the child.
Fruit Salad:
Fruits cut in bite sized pieces which the child can pick up himself, make a great fruit salad. Combine the colours and textures so that he can have a sampling of different fruits. Apples and Pears can be stewed slightly and oranges should have the outer skin and piths removed.
